The grapes are harvested when the optimum conditions of sugar and acidity are achieved to obtain a quality rosé base wine. This base wine is sent to stainless steel tanks for the elaboration of the sparkling wine under the Charmat method. Sugar and yeast are added for the second fermentation, which lasts approximately 25 days.
