After selecting the grapes, they go through pressing and cold static settling. Fermentation of the clear must takes place over 15 to 20 days at temperatures between 14–16°C with selected yeasts. The wine is kept in contact with its fine lees to achieve greater smoothness. It is then aged in stainless steel tanks until bottling, preserving its freshness, youth, and elegance.
