The harvest takes place when the grapes reach the desired optimal levels of sugar and acidity. They are carefully selected and gently pressed to obtain a high-quality must, which is then transferred to sparkling wine tanks (Charmat method) for fermentation with selected yeasts. This process lasts about 30 days and has the particularity that the generated CO₂ dissolves finely into the liquid, giving it great elegance. It is carried out at very low temperatures to preserve the characteristic aromas of the grape.
