Fermentation and post-fermentation maceration take place in small vessels with controlled temperatures ranging between 25°C and 28°C. Throughout the fermentative process, pump-overs and delestages are performed to maintain contact between the solid and liquid phases, achieving greater extraction and concentration. Natural malolactic fermentation follows. The wine is then aged for 6 months to harmonize and balance aromas and structure.
