Careful selection of grapes from Gualtallary. Each grape is harvested at its optimal ripeness and, once in the winery, is gently destemmed to avoid significant tearing of berries and skins. Fermentation takes place in small stainless steel tanks and vats at controlled temperatures between 24 and 27°C, aiming for a wine with varietal freshness and enhanced fruit and aromatic character. Part of this blend is aged in second- and third-use barrels to add complexity.
